Involve loved ones

You know, before I found out I had celiac disease (meaning gluten is a no-go for me!), I was a huge holiday baker. I’m talking the first week of November, I’d be in the kitchen whipping up a dozen loaves each of banana black walnut bread, zucchini walnut bread, and cranberry orange pecan bread. Oh, and let’s not forget the lemon poppyseed cakes, brown sugar cinnamon coffee cakes, and jars of lemon curd!

Everything was baked, wrapped in colored cellophane, and tucked away in the freezer. Then, on Christmas Eve, my kids and I would have a blast adding curling ribbon and arranging all the goodies in pretty baskets. We’d load up the car and deliver them to our friends’ homes. It was our own little holiday tradition, and our friends knew they could count on fresh-baked treats for their Christmas breakfast.

As for us, our Christmas breakfast has always been this amazing cinnamon French toast casserole I found years ago. For years, we’d stay up late on Christmas Eve after the kids were (supposedly) asleep, waiting for that sweet silence so we could get to work. Of course, any little creak would bring out the “Was that Him?” chorus, and we’d have to reassure them that Santa would come sooner if they just went to sleep!

Once those sugar plums were finally dancing in their heads, we’d get busy. Presents out of hiding, cookies strategically nibbled on, hot chocolate sipped, fireplace prepped, coffee pot ready… and yes, breakfast made!

Come 5:00 AM, the stampede of tiny feet would wake us up. My husband would head downstairs to “make sure Santa was gone” (wink, wink), and he’d get the coffee brewing, oven preheating, fire going, and tree lights twinkling while I was upstairs keeping the “gremlins” occupied with tickles. Breakfast went in the oven, we grabbed our much-needed coffee, and then braced ourselves for the whirlwind of screaming, gasping, and flying wrapping paper.

Once the chaos calmed down, breakfast was ready. And let me tell you, it was a hit! We started making this casserole for convenience, but it became such a tradition that the kids would be devastated if we ever changed it.

Okay, now for the star of the show: our Christmas morning lifesaver! This cinnamon French toast casserole is the stuff of legends (at least in our house). It’s warm, gooey, cinnamon-y perfection, and it’s so easy to make ahead of time. Trust me, this is the only way you’ll want to do French toast from now on.

We have been making this recipe for years.  It’s simple, delicious, and parent-friendly on Christmas morning.  This “casserole” sits in the refrigerator overnight so it’s ready to bake while everyone is opening gifts.
